Blender Banana Bread

Banana bread is, hands down, one of my favorite things to bake.  Mostly because I can’t get enough of the batter.  This recipe uses real foods, so you can enjoy it for breakfast or a snack on a regular basis, not just the occasional, cake-disguised-as-breakfast-food basis.  Plus, it’s all made in the blender, so it’s quick and there is minimal clean up.  Enjoy it warm, cold, with melted butter, or with drippy nut butter on top.

Blender Banana Bread

Ingredients

  • 2 cups rolled oats (gluten free, if needed)
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 cup honey
  • 3 bananas
  • 2 eggs
  • 1 tsp vanilla
  • optional: 1/3 cup chopped walnuts and/or dark chocolate chips

Directions

Preheat the oven to 350 degrees.

Add oats to a blender and blend until they are completely ground up into oat flour.  Add the rest of the dry ingredients and blend for a minute until incorporated.  Add the remaining ingredients (except nuts or chocolate chips, if using), and blend until smooth.  Stir in optional ingredients by hand.

Pour into a greased loaf pan and bake for 28-35 minutes, until a toothpick comes out clean.  Allow to cool.
